GARLIC ASPARAGUS WITH TOMATOES

Approx. Cooking Time
45 minutes
2 teaspoons olive oil
1 teaspoon organic butter
1 small onion, finely chopped 1/3 to 1/4 cup
3 Roma tomatoes, chopped
1 tablespoon lemon juice
1 tablespoon honey
1/2 sea salt ( make sure it is with iodine added )
1 teaspoon minced garlic
2 pounds Asparagus
Calories per serving 85, Calories from fat 25, 3g
Heat oil in 10 inch skillet over medium. Sautee onions in butter and olive oil, stirring ocsasionally until slighty brown. Stir in tomatoes, lemon juice,, minced garlic, honey and salt. Cook 1-2 minutes. Remove from skillet. Wipe skillet and heat 1 inch of water to boiling. Add asparagus. Reduce to medium, cover and cook 14-18 minutes or until the stalks are tender. Place asparagus in a dish, top with tomatoe mixture.
