GREEKSTYLE BEEF PASTA Serves 4 Recipe from DL Dewey Approx. Cooking Time 30 minutes |
1/2 pound ground beef 1 medium onion, chopped (about 1/2 cup) 1/4 teaspoon ground cinnamon 1/4 teaspoon pepper 1 1/2 cups Tomato Juice 1 can (10 3/4 ounces) Mushroom Soup 1/2 cup milk 1/4 cup grated Parmesan cheese 1 egg, slightly beaten 3 cups cooked pasta (about 1 1/2 cups dry) Cherry tomato wedges Pitted Ripe Olives sliced fresh parsley sprig for garnish |
| In 10-inch skillet over medium-high heat, cook beef, onion and cinnamon until beef is browned and onion is tender, stirring to separate meat. Spoon off fat. Stir in tomato juice.Heat to boiling. Reduce heat to low; cook 5 minutes. Spoon into 8- by 8-inch baking dish. In medium bowl, combine soup, milk, Parmesan cheese and egg. Add macaroni; toss to coat. Spoon over beef mixture. Bake at 3500F. for 30 minutes or until hot and bubbling and center is set. Let stand 10 minutes before serving. Garnish with tomato, olives and parsley, if desired. |
