2 teaspoons reduced calorie spread
2 cloves fresh finely chopped garlic
1 small shredded carrot, 1/2 cup
4 cups chicken broth
2 cups uncoooked orzo pasta
3 cups freshly chopped spinach
1/2 cup grated fat-free Parmesan cheese
Reduce Fat Sour Cream for Topping
Carlories per serving 310 Calories - 4g Total Fat
Melt in quart saucepan over medium heat. Cook garlic/carrot about 2 minutes, stirring until carrot is tender. Stir in borth, pastsa and spinach. Heat to boil, reduce heat to low. Simmer 15 to 20 minutes until broth is absorbed. Ster in cheese and basil, and serve with sour cream topping.
