1 lb Salmon fillets
1/4 cup lemon juice
1/2 cup finely chopped green chiles
1/4 cup fresh cilantro
1 teaspoon butter ( organic )
1 teaspoon extra virgin olive oil
Salt & Red Pepper

Preheat over to 400. Lightly wipe a baking pan, 11 X 7 X 1 1/2. Mix the lemon juice, butter and olive oil together with salt and pepper. Using pastry brush, brush each side of salmon. Sprinkled cilantro on top. Then take green chilies and spread over top. BAke uncovered approx. 18-20 minutes or until fish flakes easily. Mix an addt'l 2 teaspoons of fresh squeezed lemon juice with a little salt and red pepper. Brush this lightly over top and serve.
