SHRIMP BROCCOLLI Serves 4 Recipe from DL DEWEY Approx. Cooking Time 1 hour Serves 2 |
2 sheets heavy duty aluminum foil, 12 X 18 inches 1/2 pound medium peled, deviened, pre-cooked shrimp 1 cup instant rice, 2 tablespoons seafood seasoning 2 gloves minced garlic, 2 cupes broccoli flowers 2 tablespooon butter, ( cut in 4 pieces ) 1/2 cup water |
| Preheat over to 450. Pour rice into 1/2 cup water to soak. Wipe inside of aluminum foil with flaxseed oil or butter. Center 1/2 of shrimp, 1/4 lb. on each sheet of aluminum foil. Arrange rice around shrimp. Sprinkle shrimp, rice with seafood seasoning and half of garlic gloves. Place 1/2 broccoli over shrimp with remaining garlic and top with 1 tablespoon butter. Place 4 ice cubes on top of all of this. Bring up the foil on sides. Double fold top and one end. Through open end, pour 1/2 of remaining water left from soaking the rice in each packet. Bake 15-18 minutes on cookie sheet. Take out of oven, tear open, serve each packet on a plate. For addditional servings just keep doubling the recipe for each packet desired. |
