ROASTED CHICKEN WITH NEW POTATOES

12-15 minutes
6 skinless boneless chicken breast halves
1 pound small red potatoes,
halved or quartered, depending on size
1/3 cup mayonnaise
( use a quality, health food store brand, made with good oil )
3 tablespoons Dijon mustard
salt and pepper to taste
3 cloves garlic -- crushed
Carlories per serving 277 Calories (kcal), 2g Total Fat (8% calories from fat), 29g Protein, 26g Carbohydrate, 73mg Cholesterol, 81mg Sodium, Food Exchanges, 1 1/2 Grain (Starch), 3 1/2 Lean Meat, 1/2 Vegetable, 0 Fruit; 0 Fat, 1/2 Other Carbohydrates
Chopped fresh chives as garnish (optional)
Heat oven to 350 degrees. Lightly grease a Pyrex pan.
Place chicken and potatoes in pan.
Mix remaining ingredients (except chives)
and brush over chicken and potatoes.
Salt and pepper to taste.
Bake uncovered 30 to 35 minutes or until potatoes are tender and juice of chicken is no longer pink when centers of thickest pieces are cut. Sprinkle with chives.
