BRAN MUFFINS Serves 4 Recipe from Leanne Ely C.N.C. Approx. Cooking Time 25-30 minutes |
3 cups Bran cereal (don't use plain bran) 1 cup raisins 1 cup water -- boiled 1/3 cup molasses 1/2 cup honey 2 eggs 1 teaspoon orange rind -- grated 2 cups whole wheat pastry flour 2 1/2 teaspoons salt |

Preheat oven to 400 degrees In a large bowl, dump the cereal, raisins and oil and pour the boiling water right over the top. Give it a stir or two and set aside. In another bowl, combine buttermilk, molasses, honey, eggs and rind. Pour that over the top of your warm cereal mixture, stirring to combine. In yet another bowl, combine dry ingredients--flour, baking soda, salt and add to the cereal mixture. Line your miffin tins with cupcake liners and fill 2/3 full with batter. Bake for 20 to 25 minutes. Cool in tins for a few minutes, then carefully lift them out to continue colling on a rack |
