1 onion -- chopped
1 carrot -- chopped
1/2 red bell pepper -- chopped
2 cloves garlic -- pressed
2 teaspoons cumin
1 teaspoon nutmeg
1/2 teaspoon white pepper
1/2 cup ketchup
2 egg whites
1/2 cup buttermilk
1 cup oatmeal
2 pounds ground beef, extra lean
1 cup bread crumbs, seasoned
Calories Per serving 268 Calories (kcal); 14g Total Fat (47% calories from fat); 18g Protein; 17g Carbohydrate; 53mg Cholesterol; 457mg Sodium
Preheat oven to 375 degrees. In a skillet with a little bit of oil, saute
onion, carrot, bell pepper and garlic till translucent. Set aside. In a large mixing bowl, combine the remaining ingredients. Salt and pepper liberally. Add sauteed veggies and mix again well. Shape a loaf to look like a model of the Goodyear blimp and bake for about 45 minutes. But check it--your loaf might be thicker or thinner than mine. Let rest for about 10 minutes or so (while you finish up the mashed potatoes) and remove from pan and place on a plate with paper towels to remove excess grease.
If you're short on time, grease the daylights out of your muffin tin and make
mini-meatloaves in your muffin tins. This is one time you'll want to skip
the cupcake liners, though.
